Easy to prep, full of flavor and fiber - starting your day off right! These blackberry, coconut, and flax parfaits are Keto and meal plan friendly.
Ingredients
- 1/2 cup Golden flax seed, ground
- 1/2 teaspoon Cinnamon
- 1 cup Canned coconut milk, full fat
- 1 teaspoon Keto-friendly sweetener, I use this one
- 1 cup Greek yogurt, I use this one
- 1/2 cup Blackberries
- 1/4 cup Pecans, chopped
Directions
- Add the ground flaxseed, cinnamon, coconut milk, and your sweetener of choice to a medium-sized bowl. Whisk until well combined. Let set for a minimum of 30 minutes, and up to overnight.
- Next, assemble your parfaits. Set out your glass cups or containers. Layer the yogurt and flaxseed mixture, alternating.
- Top the parfaits with blackberries and pecans. Enjoy!
Tips
Refrigerate leftovers in an airtight container for up to 5 days
Lower protein --> use coconut yogurt
Nut-free --> use pumpkin seeds instead of pecans
